As far as packing the bike for shipping, it is quite simple. The wheels can stay on, as can the seatpost and saddle. In order to fit the bike in the box, the handlebars will need to be removed. To do this, you will be required to remove the top cap and loosen the two stem bolts. Once this is done, upwards pressure applied to the bars will remove them from the fork steerer. Once this is done, wrap the bars in something to protect them (bubble wrap, cloth etc) and place the bars on either side of the headstock in a manner seen in the picture below.
Once this is done, feel free to add any additional bubble wrap around the frame to keep it well protected. After that it would be a case of placing the bike in the box, ensuring both front and rear wheel are sitting in the cardboard cutouts in both corners of the box. As to what else to take off, basically anything that the bike did not come with when you received it (pedals, cycle computer mounts, any other accessories etc).
